Baby Shower Menus

I'm hoping that you'll find my baby shower menus and recipes as tempting as I do!

Taco Soup
(Misti C.)

1 lb. Ground Beef(or Turkey)
1 Medium Chopped Onion
1 Packet Taco Seasoning
8 oz. Tomato Sauce
28 oz. Diced Tomatoes
16 oz. Kidney Beans
16 oz. Corn
1 C. Water

Suggested Toppings: Sour Cream, Tortilla or Corn Chips, Cheese, Chopped Green Onion.

In a frying pan cook the meat and onions, then drain off grease. Place meat in a soup pot and stir in the taco seasoning. Add all remaining ingredients and bring to a boil, allowing it to simmer for 5-10 minutes. Serve with suggested toppings.

Taco Stuffed Pasta Shells
1 lb. Ground Beef (or Turkey)
1 Envelope Taco Seasoning
1 Can Refried Beans
½ C. Sour Cream
16 Jumbo Pasta Shells
1/2 C. Salsa
Suggested Toppings: Salsa, Sour Cream, Chopped Green Onions, Grated Cheese

Cook pasta shells. At the same time, cook meat and remove grease, add the taco seasoning and then add the refried beans and ½ C. sour cream. Stir.
Drain pasta and allow to cool for handling. Spread ½ C. Salsa on the bottom of a round 8 inch cake pan.
Preheat oven to 350. Stuff pasta with filling and place in pan. Make a single layer and cover with some salsa, cheese and green onions. Bake for about 10 minutes or until cheese is melted. Serve with sour cream.

Oven-Baked Barbequed Chicken
Extremely simple to feed a crowd with, making it perfect for baby shower menus.

2 lbs. Chicken Tenderloins
1 Bottle of Original Barbeque Sauce

Place defrosted tenderloins in a baking pan and cover them with sauce until they're well coated. Bake at 350 degrees for one hour or until chicken is well cooked.

Sandwich Wraps
A very healthy menu option that will please everyone!

Large pieces of iceberg lettuce
Any deli meats you would like (ham, chicken, turkey)
Assorted vegetables and toppings (tomatoes, cucumbers, sprouts, yellow peppers, pickles, cheeses)
Condiments (Miracle Whip, Mustard, Dressing)

Wash lettuce and pat dry. Layer between paper towels on a plate for service. The lettuce will act as a bun, burrito style. Unless you have guests that would prefer bread, then you could provide that too. This sandwich is great for baby shower menus because your guests can make their own to suit their personal preferences. Plus it's healthy!
